Must-Eat in Yamanashi Prefecture! “Houtou Fudou” Kawaguchiko Station Mae Branch

“Houtou” (ほうとう) is a local specialty of Yamanashi Prefecture. It looks similar to udon noodles, but unlike udon, it doesn’t go through the kneading and pounding process, so the gluten isn’t developed. This makes the noodles softer and easier to cook, and the resulting soup is thicker. When you arrive at Kawaguchiko Station at noon, of course, you have to make a pilgrimage to the famous local restaurant “Houtou Fudou.” Their houtou is made by stewing pumpkin, miso, and a generous amount of vegetables together with the houtou noodles. The broth is rich and mellow, and you can taste the natural sweetness of the vegetables. The restaurant serves each portion in a cast iron pot, and the volume is quite substantial. It’s recommended that girls with smaller appetites order accordingly. If you’re going with a group, you might as well order a plate of raw horse meat as a side dish to try something new!
